I love traditions. Baking gingerbread has always been my favourite activity with my kids no matter how old they are. Through the years, I've stuck to one recipe, and one recipe only:
Super easy & delicious
1 cup organic molasses
1/2 cup dark brown sugar
1/2 cup berry sugar
4 tsp ground ginger
4 tsp cinnamon
2 tsp vanilla paste
3/4 tbsp baking soda
2 omega 3 eggs, beaten
6 cups flour
Place all ingredients in a bowl over a boiling pot of water. Melt all ingredients (approx. 7min).
Add 3/4 tbsp baking soda until it begins to froth; remove from heat.
In a large bowl place 1 cup of unsalted butter, pour the hot frothy mixture over, mix in and let cool.
Add 2 beaten eggs, incorporate
Sift 6 cups of flour. Add 1 cup at a time to the bowl and mix well (best to use a heavy duty mixmaster such as a Kitchen Aid)
On a well-floured surface do a final knead with your hands.
Divide into 4 disks, keep covered until ready to roll out. This dough should be used fresh and not be refrigerated (as it gets too hard to handle)
Roll out fairly thin as the dough tends to grow in the oven while baking.
Bake at 325 F for 15 min.
May be used for cookies & gingerbread houses. Gets even better with time!
